Ubicado en una calle tranquila, justo al lado de la pintoresca plaza del pueblo, Bottega il Buco tiene capacidad para 24 comensales en mesas antiguas en el interior y 30 en la hermosa terraza al aire libre. La comida la prepara el chef ejecutivo Guido Trombettoni detrás de un mostrador de seis metros que corre a lo largo del lado derecho de la bodega. The Roman-style focacceria, Mediterranean market and restaurant is now open all day in the lovely small village of Santa Gertrudis, the heart of the island of Ibiza, Spain. Combining the best of il Buco and its sister restaurant and market il Buco Alimentari & Vineria, Bottega offers a curated selection of beautifully and simply prepared food using the highest quality ingredients from artisan producers, fresh baked breads and fine wines, complemented by il Buco’s signature warmth, intimacy and conviviality.
The inspiration for Bottega il Buco came from Donna’s original partner, Alberto, who was roaming through the quaint town of Santa Gertrudis last October when he stumbled upon a retail space for sale. Knowing Donna’s passion for Spain, he immediately called her in New York to tell her he had found the perfect location for their next restaurant.
“Alberto and I created the original il Buco on Bond Street in New York together nearly 25 years ago,” said Lennard. “With il Buco’s original roots firmly planted between Italy and the Iberian peninsula, this felt like a homecoming for the brand. I can’t imagine a better way to mark our silver anniversary than bringing our story full circle in building Bottega il Buco together.”
Located in the center of Ibiza, far from the island’s clubs and main tourist attractions, Santa Gertrudis buzzes all year round as an international destination populated by permanent residents and visitors from across Europe. Nestled on a quiet street located directly adjacent to the picturesque town square, Bottega il Buco seats 24 guests at antique tables on the inside and 30 on the lovely outdoor terrace. The food is prepared by Executive Chef Guido Trombettoni behind a six meter counter that runs along the right side of the space. Chef Guido is a master bread baker and experienced Italian chef with 20 years of experience working in top European restaurants and hotels.
ABOUT IL BUCO: Design- Bottega was designed as a natural extension of Donna’s New York restaurants, and of il Buco Vita, Donna’s home line of artisan Italian tableware and antique decor. Keeping in line with il Buco’s ethos, partner Alberto Avalle and il Buco Vita co-founder Antonello Radi handpicked antique Italian furniture and fixtures to hone the island aesthetic. Communal tables, chairs, antique marble sinks, and outdoor furniture were selected for their worn patina and color. The dishware was designed and custom made by il Buco Vita’s home decor collection. Bottega’s signature color, Azure blue, accents the awning and details throughout the space, paying homage to the seaside locale. As with all of the il Buco restaurants, Bottega il Buco was designed to be intimate and inviting, a modern day «trading post» for world travelers and island locals alike.
The Story: since 1994- The il Buco story began on cobblestoned Bond Street in 1994 — just short of 25 years ago — when Donna Lennard and Alberto Avalle opened an antique shop, which quickly morphed into one of the most enchanting restaurant destinations in NYC. As visitors started to join Donna and Alberto for lunch in the back of the shop, the store organically transformed into a charming Mediterranean-Italian restaurant. Today, il Buco is one of the most beloved restaurants in NYC.
The success of il Buco came from its primary vision to share a quintessential knowledge of food and tradition with communities of people. On one side, there is Alberto, a true Italian renaissance man with an unmatched commitment to sourcing and discovering the best quality food the Mediterranean has to offer. On the other side, Donna Lennard (originally a filmmaker), a master of production with unrivaled taste and tenacity for perfection and creation.
